Lemon grass is an ingredient in Thai food, it is also widely used in China and some parts of Malaysia. Many cooks are not aware of what lemon grass is. It is probably the word ‘grass’ in the name lemon grass that causes confusion. Lemon grass does not look like the grass that we are used to seeing.

It is more like a stem and emits an excellent flavour as it cooks. Traditional Chinese and Thai medicine have attributed a number of benefits to lemon grass. Soups and other dishes often use lemon grass as an ingredient.

Cocounut Milk and Coconut Cream, The Difference

Coconut milk is used in many countries for cooking. In Thailand coconut milk and coconut cream are important ingredients in many dishes. Sweet desserts and even hot and spicy dishes use both coconut milk and coconut cream. A very common question asked is, what exactly is the difference between coconut milk and coconut cream.

A simple explanation would be that, coconut cream has a thicker concistency as compared to coconut milk. If you are making coconut milk from fresh grated coconut, the first portion of extract is thicker and can be used as coconut cream. The second extract that is made by adding more hot water to the coconut would be thinner, this can be used as coconut milk.

Economy Class Syndrome, What Is It?

Economy class syndrome is related to a health problem that is supposed to be caused or aggravated, when flying long distances and being seated in the economy class of the plane. Medical research has found that sitting for a long time with little or no movement can, cause blood in the deeper veins to clot. This normally occurs in the leg.

What is dangerous is that these clots sometimes become loose and travel through the various veins of the body. They could cause damage to the heart, lungs or even brain by restricting blood flow to these vital organs. Medically this condition is referred to as DVT or Deep Vein Thrombosis.

The economy class of any flight has the most cramped seating arrangement. Such conditions increases the chances of blod clotting in the legs, this gave the medical condition the name ‘economy class syndrome’. Medical experts have suggested few simple excercises and other habits to reduce or eliminate the chances of being affected by DVT on long haul flights.
